I started looking for a fresh ginger cake recipe last night; gave up a little after midnight. Lo! and behold; I found yours when checking in on posts I've I've missed over the last few weeks!
I have a large half-hand of young ginger I've been using to flavor green tea. Thought the fresh stuff might make a good cake, so I'm going to try making one later this week.
